  • FIRST COURSE
    • Consommé royal:  Rich chicken consommé garnished with egg flan
    • Crémant:  A et M Quenard Brut Nature ‘Crémant de Savoie’
  • SECOND COURSE
    • Crispy duck tart:  Winter squash puree with pomegranate caviar, marinated duck breast with crispy skin, micro greens, viola
    • Riesling:  Reinhold Haart Riesling Spatlese Goldtropfchen 2011
  • THIRD COURSE
    • Red Snapper:  Pan seared red snapper over a lobster cake with saffron beurre blanc
    • Chardonnay:  Paysan Chardonnay Jack’s Hill 2022
  • FOURTH COURSE
    • Tournedos of beef pan seared with Latin flavors:  Local Iowa premium beef tenderloin seasoned and paired with Aji Amarillo sauce fresh leeks. Boursin Potato, sliced red skins au gratin with boursin cream fresh chive.  Glazed winter vegetables.

  • FIFTH COURSE
    • Carmel, fudge, and almond mousse:  Rich caramel mousse with chocolate molten fudge cake and almond tuile
    • Port:  Broadbent 10 year Tawny Porto
